Mama Willie’s^tm                                    Mississippi Teacake Mix

Baking Instructions

Pre Heat oven 375^o

Mix the following ingredients in medium size mixing bowl:

1. Cream 1 stick (1/4 lbs) softened butter (not margarine) in mixing bowl

1. Stir in Package #1   (Sugar & Spices)

1. Blend 1 egg (beaten)

1. Add 1t pure vanilla flavor (not imitation)

1. Add 1t pure lemon flavor (not imitation)

1. Stir in Package #2 (Flour mixture)

Ingredients should be thoroughly mixed, but sticky to the touch. Cover with wax paper and let stand, at room temperature for 10 minutes. Using a tablespoon, or cookie scoop spoon out mixture and place about 2” apart onto buttered cookie sheet and press each ball gently to flatten.

Allow teacakes to bake 10-12minutes, or until slightly browned around the edges, for the soft Mama Willie style. Allow the teacakes to cook an additional 3 minutes, for the crispier Bertha Mae style. Yields two dozen 3” teacakes or one dozen 6" teacakes.
